Help with food & wine pairings


I work in the restaurant industry, more specifically at a family owned Italian restaurant. I began serving only 3 months ago and now that I have most of the basic stuff down and can provide good service, I want to take my position to the next level by being able to recommend wines with our food.


We specialize in thin crust pizzas, serve all kinds of pastas/sauces, and we have a section of our menu where you can choose seafood, chicken, or veal cooked a variety of ways (picatta, parmigiana, st. tropez, etc).


We have a fairly long wine list including whites, several italian reds, interesting reds, and a long list of average and high end cabs (most of the menu is cabs).


I have seen the pairing charts online but they tend to be confusing and not as comprehensive as what I'm looking for. What is the best way to learn about the nature of food and wine pairings? Do you have any simple rules to follow? What is the difference between different types of wine?
