I'm preparing a 5-course dinner with an amuse bouche for some friends in a couple weeks. I'm going to ask them to bring wine, but I have never been particularly good at determining appropriate wine pairings. The menu is
amuse bouche crostini with chicken liver pâté
bread cornbread with whipped honey butter (this is fairly sweet, but it maintains a lovely sweet corn flavor. It's also very dense.)
soup broccoli gruyère
salad confit squash with hazelnuts, lemon juice, chives, and ricotta salata
entree forbidden rice with squid ink and sous vide clams
dessert flourless carrot cake with cream cheese icing (this is more of a very thick, stable custard)
I'm looking for something to go with the first 3 or 4 (which will be served fairly quickly), then another to go with the 4th and/or 5th. It seems unlikely there would be a wine that paired well with the clams AND carrot cake, so I may forgo a pairing for the last course. I'll make coffee and pour some cordials or something.
