Wife is preggers and for my child's 21st, I want to celebrate it with a bottle of wine that has aged since he/she has been born. Which one is the question?!?

So my wife and I found out that we were going to be having a child right before Christmas. I'm a huge home chef and like the good occasional bottle of wine as well. If anyone can give me recommendations on to a bottle of wine that I can save for 21 years, that would be awesome!
